There are plenty of examples of "Hout" being used in farm names on Jeppe's 1899 map of the Transvaal. These were transcribed by Marriott in 1904 for inclusion in his volume "Alphabetical Index to Farms of the Transvaal". Below are a few examples.

However, I agree, Viljoenshoek is more likely the correct spelling.

For what it's worth, the original return (from which I assume the WMBR database was transcribed) gives "Viljoenshout".

Hout means timber in Afrikaans, or at least that is its common meaning. So, Houtboschrivier ("Timber copse river"), to take the first on your list, makes sense - but not Boschrivierhout.
Or, in Cape Town, Houtbaai ("Timber Bay"), but not Baaihout, etc.

Hout can come at the end of a word, e.g "braaihout" is barbecue timber, meubelhout is carpentry timber, etc.
