Does anyone know why on monuments "V" is used and not "U" as in SOUTH it is spelled SOVTH ?

In Latin, the consonants "u" & "v" are phonetically identical and therefore there was no need to discriminate between the two. It is only later as the sounds separated the two took on different forms. A denarius is pronounced as spelt but the Romans wrote it as denarivs. So in "Latinised" names or memorials a "v" is often vsed. Cabvl is a common vseage. From the same vsage, a "w" is a not a double "v".
